Abominable Yeti Cupckaes!!!! Easy and fun!

I decided to make Yeti cupcakes for son's 9th Birthday! He plays roller derby for the Raleigh Junior Rollers and his derby name is Yeti - so I thought that these would be perfect for him to share with his teammates and coaches!!

 
 
Here is what you will need:
 
-Plastic vampire fangs - found in stores during Halloween or on Ebay or Amazon off season.
 (be sure to use pliers to crimp down the connecting spots where they bend tightly so that they do not  tear cupcake).
-Candy eyes
-Shredded Coconut for fur
 
First, make your cupcakes. Here is the recipe that I use as it is easy and delicious!
 
1 16.5oz white cake mix (I prefer Duncan Hines)
1 c. sour cream
1/2 c. vegetable oil
3 large eggs
1 tsp. almond extract
 
Preheat oven to 350 degrees. Line 2 24-cup muffin tins with white paper liners (although you may not make it to 24 cupcakes). Combine all ingredients except for food coloring in a large bowl and beat on low speed for 1 minute. Scrape down the sides of the bowl and then beat on medium for 2 additional minutes.
 
Holding the edges of each pan firmly, bang the pan a few times on the counter to level out the batter.  Bake for 20-22 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Remove from oven and allow to cool for about 5 minutes in the pan and then allow to cool completely on a cooling rack.
 
Icing
 
For the icing I used a tub of Duncan Hines Blue Raspberry. Ice the cupcakes with the blue icing. Gently insert the fangs into the cupcakes and add the eyes. Finally, hold your iced cupcake over your bowl of shredded coconut and sprinkle coconut on for Yeti fur. (Note: if some of your guests do not like coconut, you can always use white icing for fur!)
 
 
 

 
 
They turned out great and were a BIG hit! Easy to make and fun too! Enjoy!
